Dumb OSX Message
I’ve been using OSX for about 9 months now, and for the most part I find it “acceptable”. I came into it with the idea that I want it to be able to do everything I can do in Windows, with a few acceptable exceptions. For the most part there haven’t been any problems.
One of my main gripes is with their window manager, the OSX equivalent of Windows’ “Window Explorer”; it is extremely lacking in customizability (if that’s not a word, it really should be), and features. I think Windows Explorer is a great application, and I can’t think of any improvements. Now, if OSX would only follow suit and start copying features from a system that got it right, we might see some progress…
Also, selecting applications to open extensions, or file types. If you “Open With…” in OSX and select “Always open with this application”, it will always open THAT FILE with the selected app, not always open the extension (which doesn’t make a whole lot of sense to me). If you “Get Info” on a that file, then go to “Open With”, “Change All”, you get a message like this:

Very poorly (and inaccurately) described, but that does what I want.

Yeah, Finder needs some work. I’ve found it becomes livable over time, but I HATE that you can’t set a viewing preference for all folders like you’ve been able to with Windows Explorer since the dawn of time.
Word on the street is that 10.5 doesn’t fix Finder gripes at all.

In regards to Finder viewer preferences,
Finder > View > Show View Options > All Windows = Solved.
Just like in Windows, if you don’t want to look around (even a little) then you will never find it. This has been available since the dawn of time.
In regards to the Finder window, it is fully customizable. Your lack of any real world example doesn’t really help. The example you do provide should be quickly dismissed by anyone who spends more than 2 seconds thinking about it. You described a process for the Mac that is what, 3 or 4 steps? The same applies to Windows! Also, how often are you “permanently” changing which programs open certain extensions? Probably very rarely. So, get over it.

1) There are practically no options for “Column View”.
2) I’m talking about something different than that which you solved. I’m talking about customizing the output:
a) Sorting by file type
b) Sorting by revision date
Both of those are VERY basic operations, and I’m astounded Finder doesn’t have them.
You obviously take criticism to the Mac OS very seriously, fanboy, if YOU spent more than 2 seconds thinking about without a bias you’d realize you only answered Dan’s question.
I have spent a little time looking around, and haven’t found quick and easy solutions to my gripes, like I’ve come to expect.

I should have been more specific – my big gripe is that I can’t set all windows (new and old) to open in List view as opposed to the hideous and wasteful Icon view.

Your closest choice is non-intuitively available under Finder -> Preferences. “Open new windows in column view”. Can’t do list view, which makes no sense.
